A reader wrote to us in the first week of this month to ask, politely, why we bother. The trade already has vendors who publish certificates, laboratories who publish results, and an internet full of people comparing both. What does a magazine add? The honest answer is a method: we say where a number came from, we print what we could not establish, and when we get it wrong we say so in the same typeface we used to get it wrong.

Cold chain is the subject that most reliably turns out to be less alarming and more interesting than it first appears. A lyophilised powder tolerates excursions that would ruin a solution; the excursion that matters is cumulative rather than peak; and a parcel shipped without a temperature indicator is not a parcel that stayed cold — it is a parcel about which nothing at all is known.
To the reader who wrote in April asking us to be less cautious: we have thought about it, and the caution is load-bearing. It is what allows the confident sentences to be confident.
